Pasta Bean Salad =)

I made a red pasta salad today which can be eaten cold or hot.  The plan is that I serve hot this evening and then tomorrow lunch time I can serve cold on the side of some leafy salad.  My Red Pasta salad turned out to be a hit with My Daughter and Husband so I'm very happy with this quick throw together.

Bring Pasta of your choice to boil drain and rinse under cold tap...  Helps prevent pasta sticking.

Mix in some red pesto ad sour cream
Grate some cheese in if you like but not to much.
Add a tin of mixed bean salad 

Mix all together and serve with salad on the side...

Deelish and nice an easy to make... Enjoy 💜

Summer Soup for supper

So I had this bag of cabbage melody that I'd bought intending to make stir fry with.  I changed my mind when I realised I have a cupboard full of lentils. So summer soup it became...

I got experimental with some ingredients in my cupboard adding Worcestershire sauce an some crushed mustard seeds along with my vegetable stock cubes and mixed herbs.... 

So I threw all this in my pot of water to bring to the boil then simmer....  I chose to blend this as my 9 year old daughter is more likely to eat it if it looks less complicated... 

1 bag cabbage melody
1 wad of frozen chopped onions
Freshly chopped spring onions
2 chopped celery stalks
And some lentils. .

I just sprinkled a small amount as I did not want to make my soup too thick...

Soup so simple a dish yet so satisfying not matter what time of year.... Filled with so many nutrients, warm and comforting to an aching tired soul...
